SERVES: 6

INGREDIENTS
  • Unpeeled, shredded organic zucchini: 4 cups
  • 3 cucumbers, peeled and thinly sliced
  • 1 small red onion, sliced
  • 1/2 cup full fat sour cream (cultured brands like Good Culture is best)
  • 2 Tbls. mayonnaise (brands like Chosen Foods, Primal Kitchen & Sir Kensington are best)
  • 2 tsp lime juice (I like Lakewood Organic, not-from-concentrate lime juice)
  • 2 Tbls. fresh chopped dill or chives (whichever you prefer)
  • Salt and fresh cracked black pepper to taste
DIRECTIONS
  1. Combine cucumber and red onion in a bowl.
  2. In a small bowl, combine sour cream, mayonnaise, lime juice, chives, salt and pepper. Mix well to combine.
  3. Stir the dressing into the cucumber and red onion and gently coat.
  4. For best results, chill salad in fridge for 30 minutes or more to allow the flavor to mingle.
